Ingredients:-
- 2 pounds ground beef (preferably lean)
- 1/2 cup almond flour or crushed pork rinds
- 2 eggs
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 1/4 cup sugar-free ketchup
- 1 tablespoon mustard
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Sliced cheese (for topping, optional)
- Chopped parsley for garnish (optional)
Instructions:-
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, almond flour (or crushed pork rinds), eggs, diced onions, minced garlic, sugar-free ketchup, mustard, Worcestershire sauce, salt, and pepper. Mix everything thoroughly. If the mixture seems too wet, you can add a bit more almond flour or pork rinds for better consistency.
- Add Cheese:
- Fold in the shredded cheddar cheese into the meat mixture. Ensure it’s evenly distributed throughout.
- Shape the Meatloaf:
- Transfer the meat mixture to a baking dish or shape it into a loaf on a baking sheet lined with parchment paper.
- Bake:
- Place the meatloaf in the preheated oven and bake for approximately 40-50 minutes or until the internal temperature reaches 160°F (71°C). If desired, add slices of cheese on top during the last 5-10 minutes of baking until melted and bubbly.
- Rest and Serve:
- Once cooked through, remove the meatloaf from the oven and let it rest for a few minutes before slicing.
- Garnish and Serve:
