  • Unsweetened Cocoa Powder: Incorporate 1/3 cup of unsweetened cocoa powder to infuse the oatmeal with rich, chocolatey flavor that will satisfy any craving.
  • Stevia: Add 1/3 cup of Stevia to sweeten the oatmeal without adding unnecessary calories or sugar, keeping it light and guilt-free.
  • Unsweetened Vanilla Almond Milk: Use 1 ½ cups of unsweetened vanilla almond milk to create a creamy texture that perfectly complements the oats and cocoa.
  • Unsweetened Applesauce: Include 2 cups of unsweetened applesauce to add natural sweetness and moisture to the oatmeal, while also reducing the need for additional fats or sugars.
  • Sugar-Free Chocolate Syrup: Drizzle in ½ cup of sugar-free chocolate syrup to intensify the chocolate flavor and add a touch of sweetness without the guilt.
  • Eggs: Crack in 4 large eggs to bind the ingredients together and provide structure to the baked oatmeal.
  • Pure Vanilla Extract: Add 1 tablespoon of pure vanilla extract to enhance the overall flavor profile and add a hint of warmth and sweetness.
  • Baking Powder and Salt: Use 1 teaspoon of baking powder and ½ teaspoon of salt to ensure that the oatmeal rises properly and is well-seasoned.
  • Frozen Dark Sweet Cherries: Fold in 2 cups of frozen dark sweet cherries to add bursts of juicy sweetness and vibrant color to the oatmeal.

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 350 degrees Fahrenheit. Prepare a 9” x 13” glass baking dish by spraying it with cooking spray to prevent sticking.
  2. Mix the Ingredients: In a large mixing bowl, combine the oats, cocoa powder, Stevia, almond milk, applesauce, chocolate syrup, eggs, vanilla extract, baking powder, salt, and cherries. Stir until all ingredients are well combined and evenly distributed.
  3. Bake the Oatmeal: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 40 minutes, or until the oatmeal is set and a toothpick inserted into the center comes out dry.
  4. Prepare the Glaze: While the oatmeal is baking, prepare the glaze by combining nonfat Greek yogurt, unsweetened cocoa powder, Stevia, chocolate syrup, vanilla extract, and cherry extract in a bowl. Mix until smooth and creamy, then refrigerate until ready to use.
  5. Serve and Enjoy: Once the oatmeal is done baking, remove it from the oven and allow it to cool slightly. Serve warm or cold, topped with a dollop of the prepared glaze. Garnish with additional sugar-free chocolate syrup, fat-free Reddi Wip, and a maraschino cherry if desired.
