Asian-Inspired Chicken Salad with Sesame Dressing
Ingredients:

Salad:
1/2 green cabbage, shredded or thinly sliced
3 cups cooked and shredded chicken
3 large carrots, shredded
4 green onions, chopped
1/2 cup fresh cilantro, chopped
1/4 cup fresh mint, chopped
1/3 cup slivered almonds
Dressing:
1 orange, zested and juiced
3 tablespoons sesame oil
3 tablespoons soy sauce
1/4 cup avocado oil
4 tablespoons rice vinegar
2 teaspoons honey
1-2 teaspoons sriracha
1 teaspoon fresh grated ginger
1/2 teaspoon garlic powder
Salt to taste
Preparation:
Prepare the Dressing:
In a small bowl, whisk together all the dressing ingredients (orange zest and juice, sesame oil, soy sauce, avocado oil, rice vinegar, honey, sriracha, ginger, garlic powder, and salt) for 1-2 minutes until well combined.


Assemble the Salad:
In a large bowl, combine the shredded cabbage, chicken, and carrots.
Pour the prepared dressing over the top and toss to combine.
