Air Fryer Stuffed Mushrooms with Spinach

Ingredients:

  • 12 large white mushrooms
  • 1 cup fresh spinach, chopped
  • 2 wedges of Laughing Cow Light cheese
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1 clove garlic, minced
  • 1/2 teaspoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Mushrooms:
    • Clean the mushrooms and remove the stems. Finely chop the stems and set aside.
  2. Cook the Spinach:
    • In a small pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
    • Add the chopped spinach and cook until wilted, about 2-3 minutes.
    • Add the chopped mushroom stems and cook for another 2-3 minutes. Season with salt and pepper to taste.
  3. Mix the Filling:
    • In a bowl, combine the cooked spinach mixture with the Laughing Cow cheese. Mix until well combined.
  4. Stuff the Mushrooms:
    • Fill each mushroom cap with the spinach and cheese mixture.
  5. Add Mozzarella:
    • Sprinkle a small amount of shredded mozzarella cheese on top of each stuffed mushroom.
  6. Air Fry:
    • Preheat the air fryer to 375°F (190°C).
    • Place the stuffed mushrooms in a single layer in the air fryer basket.
    • Cook for 8-10 minutes, or until the mushrooms are tender and the cheese is melted and slightly golden.
  7. Serve:
