Air Fryer Stuffed Mushrooms with Spinach
Ingredients:
- 12 large white mushrooms
- 1 cup fresh spinach, chopped
- 2 wedges of Laughing Cow Light cheese
- 1/4 cup shredded part-skim mozzarella cheese
- 1 clove garlic, minced
- 1/2 teaspoon olive oil
- Salt and pepper to taste
Instructions:
- Prepare the Mushrooms:
- Clean the mushrooms and remove the stems. Finely chop the stems and set aside.
- Cook the Spinach:
- In a small pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
- Add the chopped spinach and cook until wilted, about 2-3 minutes.
- Add the chopped mushroom stems and cook for another 2-3 minutes. Season with salt and pepper to taste.
- Mix the Filling:
- In a bowl, combine the cooked spinach mixture with the Laughing Cow cheese. Mix until well combined.
- Stuff the Mushrooms:
- Fill each mushroom cap with the spinach and cheese mixture.
- Add Mozzarella:
- Sprinkle a small amount of shredded mozzarella cheese on top of each stuffed mushroom.
- Air Fry:
- Preheat the air fryer to 375°F (190°C).
- Place the stuffed mushrooms in a single layer in the air fryer basket.
- Cook for 8-10 minutes, or until the mushrooms are tender and the cheese is melted and slightly golden.
- Serve:
- Serve immediately as a delicious and low-point appetizer or side dish.
