  • 2 Tbsp French Mustard
  • 1 Tsp Garlic Puree
  • 1 Tbsp Oregano
  • 1 Tbsp Parsley
  • 1 Tbsp Thyme
  • Salt & Pepper

Instructions:

  1. Prepare the Gammon:
    • In a small ramekin, combine the French mustard, half of the olive oil, and the garlic puree. Mix well to create a marinade.
    • Score the flesh side of the gammon joint with a sharp knife, then brush the marinade over the gammon, ensuring it gets into the gaps.
    • Place the gammon joint into the air fryer, fat side down, and air fry for 20 minutes at 160°C (320°F).
  2. Prepare the Sides:
    • While the gammon is cooking, prepare the vegetables. Peel and dice the potatoes into roasties, peel and slice the parsnips into fries, peel and dice the swede, and clean the baby carrots.
    • In a large bowl, toss the prepared vegetables with the remaining olive oil, oregano, parsley, thyme, salt, and pepper, ensuring they are well coated.

    • After 20 minutes, turn the gammon over in the air fryer and add the seasoned vegetables around the gammon, filling in the gaps.

  • 1 Medium Swede/Rutabaga
  • 500 g Baby Carrots

  • 3 Medium White Potatoes
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp French Mustard

  • Whilst the air fryer is on, peel and dice your potatoes into roasties, peel and slice your parsnips into fries, peel and dice your swede, and clean your baby carrots. Load into a bowl together with the rest of the olive oil and the seasonings and mix well with your hands.
  • When the air fryer beeps, turn the gammon over and then feed all the potatoes and veggies into the gaps around the gammon.
  • Air fry for a further 30 minutes at the same temperature.
