Air Fryer Coffee and Walnut Cake

Ingredients
Cake:
- 170g (6 oz) self-raising flour
- 170g (6 oz) margarine (or butter), softened
- 170g (6 oz) caster sugar
- 3 medium eggs
- 2 tsp instant coffee, dissolved in a small amount of boiling water (allow to cool)
Butter Icing:
- 100g (3.5 oz) butter, softened
- 200g (7 oz) icing sugar
- 1-2 tsp instant coffee, dissolved in boiling water (cooled)
Decoration:
- Walnut halves, for garnish
Instructions
1. Prepare the Cake Batter
- In a large mixing bowl, combine self-raising flour, margarine, caster sugar, and eggs. Mix until smooth.
- Add the cooled coffee mixture and blend thoroughly until the batter is uniform.
2. Prepare the Air Fryer
- Preheat your air fryer to 140°C (284°F) for about 3-5 minutes.
- Line the bottom of two 6-inch cake tins with baking parchment to prevent sticking. Grease the sides lightly with margarine or butter.
3. Bake the Cake
- Divide the batter evenly between the two prepared tins.
- Place the tins in the air fryer (you may need to bake them one at a time depending on the size of your air fryer).
- Bake at 140°C (284°F) for 45 minutes, or until a skewer inserted into the center comes out clean.
4. Cool the Cakes
- Remove the cakes from the air fryer and let them cool in the tins for 10 minutes.
- Transfer to a wire rack and allow to cool completely before frosting.
5. Make the Coffee Butter Icing
- In a bowl, beat the softened butter until creamy. Gradually add the icing sugar, mixing well after each addition.
- Stir in the cooled coffee mixture to achieve the desired flavor and consistency.
6. Assemble the Cake
- Spread half of the coffee butter icing on one layer of the cake.
- Place the second layer on top and spread the remaining icing over the top.
- Decorate with walnut halves for a classic finish.
