Air Fryer Blueberry Bread
Ingredients
:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar
1/4 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1/2 cup milk (or buttermilk for extra moisture)
1 cup fresh or frozen blueberries (if using frozen, do not thaw)
Instructions:
Prepare the Air Fryer:
Preheat your air fryer to 320°F (160°C) for about 5 minutes.
Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream the Butter and Sugar:
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
Add Wet Ingredients:
Add the egg and vanilla extract to the butter mixture and beat until well combined.
Gradually add the milk, mixing until smooth.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
Gently fold in the blueberries.
Prepare the Pan:
Grease a small loaf pan or line it with parchment paper. Ensure the pan fits in your air fryer basket.
Fill the Pan:
Pour the batter into the prepared loaf pan, spreading it evenly.
Air Fry the Bread:
Place the loaf pan in the air fryer basket.
Cook at 320°F (160°C) for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cooking time may vary depending on the air fryer model and the size of the loaf pan.
Cool the Bread:
Allow the blueberry bread to cool in the pan for about 10 minutes.
Remove the bread from the pan and let it cool completely on a wire rack before slicing.
Serve:
Slice the bread and enjoy it on its own or with a spread of butter or cream cheese.
Tips:
Toss the blueberries in a bit of flour before folding them into the batter to prevent them from sinking to the bottom.
If the top of the bread is browning too quickly, cover it loosely with aluminum foil during the last 10 minutes of cooking.
Store any leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
Enjoy your homemade blueberry bread made in the air fryer!
