Air Fried Buffalo Cauliflower Bites with Blue Cheese Dressing (Weight Watchers-Friendly)

Ingredients:

For the Cauliflower Bites:

  • 1 head cauliflower, cut into bite-sized florets
  • 1/2 cup whole wheat flour
  • 1/2 cup water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1 tablespoon melted butter (use light butter for fewer points)

For the Blue Cheese Dressing:

  • 1 cup plain non-fat Greek yogurt (0 points)
  • 1 tablespoon low-fat mayonnaise
  • 1 tablespoon Ranch dressing mix
  • 1 tablespoon crumbled blue cheese

Instructions:

1. Prepare the Cauliflower Bites:

  • Preheat your air fryer to 400°F (200°C).
  • In a large bowl, whisk together the whole wheat flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until a smooth batter forms.
  • Add the cauliflower florets to the batter, tossing to coat evenly.
  • Lightly spray the air fryer basket with cooking spray. Place the coated cauliflower florets in a single layer in the basket. You may need to work in batches depending on the size of your air fryer.
  • Air fry the cauliflower for 15-20 minutes, shaking the basket halfway through, until the cauliflower is crispy and golden brown.
  • In a separate bowl, mix the hot sauce and melted butter. Toss the air-fried cauliflower in the buffalo sauce mixture until well coated.

2. Prepare the Blue Cheese Dressing:

  • In a small bowl, combine the Greek yogurt, low-fat mayonnaise, Ranch dressing mix, and crumbled blue cheese. Mix until well combined.

3. Serve:

  • Serve the buffalo cauliflower bites hot with the blue cheese dressing on the side.
