These homemade oat and peanut butter bars are chewy, nutty, naturally sweet, and incredibly easy to prepare. Made with simple pantry ingredients, they’re perfect for breakfast, lunchboxes, or a quick afternoon snack — and there’s no oven required!
Ingredients
- 2 cups rolled oats
- ½ cup creamy peanut butter
- ⅓ cup honey or maple syrup
- 2 tbsp melted coconut oil or butter
- 1 tsp vanilla extract
- ¼ tsp salt
- ¼ tsp ground cinnamon (optional)
- ⅓ cup dark chocolate chips (optional)
- 1 tbsp chia seeds or chopped nuts (optional)
Instructions
Step 1: Prepare your baking dish
Line an 8 × 8-inch square baking dish or a small container with parchment paper. Leave a little extra paper hanging over the edges so you can easily lift the bars out once they have set.
Step 2: Make the peanut butter mixture
Add the peanut butter, honey, and melted coconut oil to a microwave-safe bowl. Warm the mixture for about 20–30 seconds, then stir until smooth and well combined. If you don’t have a microwave, gently warm the ingredients in a small saucepan over low heat.
Step 3: Add the flavor
Stir in the vanilla extract, salt, and optional cinnamon. The mixture should be smooth, creamy, and slightly glossy. These ingredients add flavor and help the sweetness balance the nutty peanut butter.
Step 4: Mix in the oats
Add the rolled oats to the peanut butter mixture. Stir thoroughly until every oat is coated. If you want extra crunch and nutrition, mix in chia seeds, chopped almonds, or walnuts. If the mixture seems too dry, add a little more peanut butter; if it’s too sticky, add a few extra oats.
Step 5: Transfer and press
Pour the mixture into the prepared dish. Use the back of a spoon, spatula, or the bottom of a flat glass to press it down firmly and evenly. Pressing well is important because it helps the bars hold together when sliced.
Step 6: Add the chocolate topping
Melt the dark chocolate chips in short microwave intervals, stirring between each interval until smooth. Drizzle the melted chocolate over the oat mixture or spread it into a thin layer. You can also sprinkle a few extra oats or chopped peanuts on top.
Step 7: Chill until firm
Place the dish in the refrigerator for at least 2–3 hours, or until the mixture is completely firm. For a quicker option, place it in the freezer for approximately 30–45 minutes.
Step 8: Slice and serve
Lift the chilled mixture out using the parchment paper. Place it on a cutting board and slice into 10–12 bars using a sharp knife. For cleaner cuts, warm the knife slightly and wipe it between slices.
✨ Tips for Perfect Oat Bars
- For chewy bars: Use old-fashioned rolled oats instead of steel-cut oats.
- For bars that hold together: Press the mixture firmly into the dish and chill it thoroughly.
- For a healthier twist: Use natural peanut butter with no added sugar and dark chocolate.
- For extra protein: Add 2–3 tablespoons of protein powder, along with a little extra peanut butter if the mixture becomes dry.
- For a crunchy texture: Toast the oats in a dry pan for a few minutes before mixing, then let them cool.
🥣 Storage Instructions
- Refrigerator: Store in an airtight container for up to 1 week.
- Freezer: Freeze individually wrapped bars for up to 2–3 months.
