Ingredients
- 2 cups all-purpose flour (maida)
- ½ tsp salt
- 1 tsp sugar
- 2 tbsp oil
- ¾ cup lukewarm water (add gradually)
- 3 tbsp softened butter or ghee
- Extra flour for rolling
Instructions
Step 1: Prepare the dough
In a large bowl, add flour, salt, and sugar. Mix well, then add oil and gradually pour in lukewarm water. Mix until a soft dough forms. Knead for about 8–10 minutes until the dough becomes smooth and elastic.
Step 2: Let the dough rest
Cover the dough with a clean kitchen towel and let it rest for 20–30 minutes. This helps relax the gluten and makes the flatbread easier to roll.
Step 3: Divide and shape
Divide the dough into 6 equal portions and roll each portion into a smooth ball. Lightly dust your work surface with flour and roll each ball into a thin circle.
Step 4: Create the flaky layers
Spread a thin layer of softened butter or ghee over the rolled dough. Make a small cut from the center to the edge, then roll the dough around itself into a cone shape. Tuck the pointed end underneath and gently flatten it into a ball. Repeat with the remaining portions.
Step 5: Roll the flatbreads
Let the shaped dough balls rest for 5–10 minutes. Gently roll each one into a medium-thin circle, taking care not to press too hard so the layers remain intact.
Step 6: Cook until golden
Heat a skillet or tawa over medium heat. Place one flatbread on the hot surface and cook for about 30–45 seconds, until small bubbles appear. Flip it over, spread a little butter or ghee, and cook for another 30–45 seconds. Flip again if needed, cooking until golden spots appear and the bread is cooked through.
Step 7: Keep them soft
Transfer the cooked flatbread to a plate and cover it with a clean kitchen towel. Repeat with the remaining dough. Stacking and covering the breads helps keep them warm and soft while preserving their delicate, flaky layers.
✨ Tips for Perfect Flatbread
- For extra softness: Keep the dough soft and avoid adding too much extra flour.
- For flaky layers: Spread butter or ghee evenly between the layers.
- For the best texture: Don’t skip the resting time.
- For even cooking: Keep the skillet at medium heat rather than letting it become too hot.
- For serving: Enjoy warm with curry, chicken, kebabs, scrambled eggs, or your favorite dip.
