Ingredients
Chicken
- 1 lb (450 g) boneless, skinless chicken breast, cut into bite-size pieces

Stir-Fry Sauce

- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch
- ½ tsp red pepper flakes, optional
- ½ tsp black pepper
For Garnish
- 1 tsp sesame seeds
- 1–2 green onions, sliced
- Optional: fresh cilantro
Instructions
- Place the chicken pieces in a bowl.
- Add 1 tablespoon soy sauce, cornstarch, garlic powder, and black pepper.
- Toss until the chicken is evenly coated.
- In a separate bowl, whisk together all of the sauce ingredients.
- Set the sauce aside while preparing the vegetables.
- Heat a large skillet or wok over medium-high heat.
- Add the cooking oil.
- Add the chicken in a single layer.
- Cook for about 4–6 minutes, stirring occasionally, until browned and cooked through.
- Transfer the chicken to a clean plate.
- Add the sliced onion and carrots to the same skillet.
- Stir-fry for about 2 minutes.
- Add the bell peppers and continue cooking for another 2 minutes.
- Add the chopped cabbage.
- Cook for 3–4 minutes, tossing frequently, until the cabbage begins to soften while retaining some texture.
- Add the minced garlic and fresh ginger.
- Stir-fry for about 30 seconds until fragrant.
- Return the cooked chicken to the skillet.
- Stir the prepared sauce once more, then pour it over the chicken and vegetables.
- Toss everything together for 1–2 minutes as the sauce thickens and coats the ingredients.
- Turn off the heat.
- Sprinkle with sesame seeds and sliced green onions.
- Serve immediately.
Helpful Tips
Cut everything before cooking. Stir-frying moves quickly, so having the chicken and vegetables prepared beforehand makes the process much easier.
Don’t overcrowd the chicken. If your skillet is small, cook the chicken in two batches so it browns properly.
