� Crispy Garlic Mushroom Bites
Golden, crunchy on the outside, juicy and garlicky inside. These are excellent as an appetizer, snack, or side dish.
Ingredients
For the mushrooms
- 500 g (1 lb) button or cremini mushrooms
- 3–4 cloves garlic, finely minced
- 2 tbsp olive oil
- 1 tbsp melted butter
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp Italian seasoning
- ¼ tsp chili flakes — optional
For the crispy coating
- ½ cup all-purpose flour
- 2 tbsp cornstarch
- 2 large eggs
- 1 cup panko breadcrumbs
- ¼ cup finely grated Parmesan cheese — optional
- ½ tsp garlic powder
- ½ tsp paprika
- ¼ tsp salt
- ¼ tsp black pepper
For serving
- Fresh parsley, chopped
- Lemon wedges
- Garlic aioli, ranch, or spicy mayo
1. Prepare the mushrooms
- Gently clean the mushrooms with a damp paper towel. Avoid soaking them in water because excess moisture makes them less crispy.
- Trim the stems if necessary.
- For very large mushrooms, cut them in half. Small mushrooms can remain whole.
- Pat them very dry with paper towels.
2. Make the garlic seasoning
Mix together:
- minced garlic
- olive oil
- melted butter
- salt
- black pepper
- paprika
- Italian seasoning
- chili flakes, if using
Add the mushrooms and toss thoroughly.
Important: Don’t leave the mushrooms sitting in the garlic mixture for a long time. Coat them and move on to the breading so they don’t release too much moisture.
3. Set up the crispy coating
Prepare three bowls:
Bowl 1:
Flour + cornstarch
Bowl 2:
Beat the 2 eggs until smooth.
Bowl 3:
Panko + Parmesan + garlic powder + paprika + salt + pepper.
4. Bread the mushrooms
Take each mushroom and:
- Roll it in the flour mixture.
- Dip it into the beaten egg.
- Press it firmly into the panko mixture.
- Make sure the mushroom is completely covered.
Place the coated mushrooms on a plate or baking rack.
Extra-crispy trick: For a thicker crust, dip the mushroom back into the egg and then into the panko one more time.
5. Air fryer method — my favorite
Preheat your air fryer to 200°C / 400°F for about 3 minutes.
Arrange the mushrooms in a single layer. Don’t overcrowd the basket.
Lightly spray or brush them with oil.
Air fry for approximately 10–14 minutes, turning them halfway through.
They’re ready when the coating is deep golden and crunchy.
6. Oven method
Preheat the oven to 220°C / 425°F.
Place the mushrooms on a parchment-lined baking sheet, preferably on a wire rack so hot air can circulate underneath.
Lightly spray with oil.
Bake for 18–25 minutes, turning once halfway through, until golden and crisp.
7. Deep-frying method
For the crispiest, restaurant-style version:
- Heat neutral oil to 175–180°C / 350–355°F.
- Fry the mushrooms in small batches for about 2–4 minutes, depending on their size.
- Remove when deeply golden.
- Drain on a wire rack or paper towels.
- Season immediately with a tiny pinch of salt.
🧄 Quick Garlic-Parmesan Finish
While the mushrooms are still hot, toss them with:
- 1 tbsp melted butter
- 1 small minced garlic clove
- 1 tbsp Parmesan
- 1 tbsp chopped parsley
- Tiny pinch of salt
- Squeeze of lemon
Don’t add too much butter—the coating can lose its crispiness.
🔥 Secrets to REALLY crispy mushrooms
- Dry the mushrooms extremely well.
- Use panko, not regular fine breadcrumbs.
- Adding cornstarch to the flour helps create a lighter, crunchier crust.
- Don’t overcrowd the air fryer or oven tray.
- Spray the coating lightly with oil before cooking.
- Serve immediately. Mushrooms naturally release moisture as they sit, so the crust softens over time.
- For the crunchiest result, deep-fry; for a lighter version, use the air fryer.
🌶️ Spicy Garlic Version
Add ½ tsp cayenne + ½ tsp chili powder + ½ tsp smoked paprika to the breadcrumb mixture. Finish with fresh parsley and lemon.
🥣 Easy Garlic Dip
Mix:
- ½ cup mayonnaise
- 2 tbsp Greek yogurt
- 1 small garlic clove, finely grated
- 1 tsp lemon juice
- ½ tsp Dijon mustard
- Pinch of salt
- Black pepper
Refrigerate for 15–20 minutes before serving.
Best combination: crispy garlic mushrooms + creamy garlic dip + fresh lemon squeeze.
