🍰 Easy Keto Sugar-Free Cheesecake
This creamy keto cheesecake has a buttery almond-flour crust, rich vanilla cheesecake filling, and no added sugar. It’s easy enough for beginners and makes a great make-ahead dessert.

Ingredients
For the keto crust
- 1½ cups almond flour
- 3 tbsp unsalted butter, melted
- 2 tbsp granulated keto sweetener, such as erythritol or allulose
- ½ tsp vanilla extract
- ¼ tsp salt
For the cheesecake filling
- 24 oz (680 g) full-fat cream cheese, softened
- ¾ cup granulated keto sweetener
- 3 large eggs, room temperature
- ½ cup full-fat sour cream
- 2 tsp vanilla extract
- 1 tbsp fresh lemon juice
- 1 tbsp lemon zest, optional
- 2 tbsp heavy cream
- ¼ tsp salt
Optional topping
- Fresh strawberries, raspberries, or blueberries
- Sugar-free whipped cream
- A few chopped pecans
- Sugar-free berry sauce
Instructions
1. Prepare the pan
Preheat your oven to 325°F (165°C).
Grease a 9-inch springform pan. For easier removal, place a round piece of parchment paper on the bottom.
If you want extra protection against leaks, wrap the outside bottom of the springform pan with aluminum foil.
2. Make the crust
Add the almond flour, keto sweetener, salt, melted butter, and vanilla to a bowl.
Mix until everything is evenly combined and the mixture resembles damp sand.
Press the mixture firmly into the bottom of the prepared pan. Use the bottom of a glass or measuring cup to compact it evenly.
Bake the crust for 8–10 minutes, just until lightly golden around the edges.
Remove it from the oven and allow it to cool while you prepare the filling.
3. Make the cheesecake filling
Make sure the cream cheese is properly softened. This helps prevent lumps.
Place the cream cheese and sweetener in a large mixing bowl.
Beat on low to medium speed until smooth and creamy, scraping down the sides of the bowl as needed.
Don’t whip the mixture excessively—you want a smooth filling without incorporating lots of air.
4. Add the eggs
Add the eggs one at a time, mixing on low speed just until each egg disappears into the batter.
Avoid overmixing.
Add the sour cream, vanilla, lemon juice, lemon zest if using, heavy cream, and salt.
Mix just until smooth.
5. Fill the pan
Pour the cheesecake batter over the cooled crust.
Gently tap the pan against the counter a couple of times to release large air bubbles.
Smooth the surface with a spatula.
6. Bake
Place the cheesecake in the preheated 325°F oven.
Bake for approximately 50–60 minutes.
The edges should look set, while the center should still have a slight jiggle when you gently shake the pan.
Don’t wait until the entire cheesecake is completely firm—the cheesecake will continue setting as it cools.
7. Cool gradually
Turn off the oven and leave the cheesecake inside with the door slightly open for about 30 minutes.
Remove it from the oven and place it on a cooling rack.
Let it cool to room temperature.
8. Refrigerate
Cover the cheesecake and refrigerate for at least 4 hours, preferably overnight.
This step is important because the cheesecake becomes firmer, creamier, and easier to slice as it chills.
9. Serve
Run a thin knife around the edge before releasing the springform pan.
Cut into slices with a sharp knife. For especially clean slices, wipe the knife between cuts.
Top with a few fresh berries or sugar-free whipped cream if desired.
⭐ Tips for the Best Keto Cheesecake
Use room-temperature ingredients. Cold cream cheese tends to produce lumps.
Don’t overbeat the eggs. Too much air can cause the cheesecake to puff up and then crack as it cools.
Don’t overbake. A slightly wobbly center is exactly what you want.
Choose your sweetener carefully. Allulose tends to give a softer texture, while erythritol can sometimes create a slightly cooling sensation or become firmer after refrigeration.
For a smoother texture: Use full-fat brick-style cream cheese rather than spreadable tub-style cream cheese.
For a firmer cheesecake: Refrigerate overnight before slicing.

For a quick berry topping, combine:
- 1 cup raspberries or strawberries
- 1–2 tbsp keto sweetener
- 1 tsp lemon juice
Mash the berries lightly and let them sit for 10–15 minutes. Spoon over individual cheesecake slices just before serving.
Storage
Keep the cheesecake covered in the refrigerator for up to 5 days.
You can also freeze individual slices for about 1–2 months. Wrap each slice tightly and thaw it overnight in the refrigerator.
