Proper preparation ensures optimal texture. Begin by patting the cod completely dry using paper towels. Removing surface moisture helps the seasoning adhere and encourages crisping.
If your fillets are uneven in thickness, consider trimming thinner edges slightly or folding them under to promote even cooking.
Step 2: Seasoning for Balanced Flavor
In a small bowl, combine smoked paprika, garlic powder, onion powder, thyme, salt, pepper, and lemon zest. Brush each fillet lightly with oil, then evenly coat with the seasoning blend.
For added texture, press the fillets gently into the panko-Parmesan mixture. This step is optional but highly recommended if you prefer a crunchier exterior.
Step 3: Preheating the Air Fryer
Preheat your air fryer to 400°F (200°C) for 3–5 minutes. Preheating is essential for achieving immediate searing when the fish enters the basket.
Lightly spray the basket with oil to prevent sticking.

Place the cod fillets in a single layer, ensuring they do not overlap. Air fry at 400°F for 8–12 minutes, depending on thickness.
The cod is done when:
- The internal temperature reaches 145°F (63°C)
- The fish flakes easily with a fork

Avoid overcooking, as cod can become dry quickly.

While the cod cooks, whisk together mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, zest, parsley, chives, garlic, salt, and pepper.
