🥘 Mediterranean Chicken Zucchini Bake

Ingredients:

  • 2 medium zucchinis, sliced into thin rounds
  • 1 lb (450 g) boneless skinless chicken breast, cut into bite-sized cubes
  • 1 small red onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted & halved
  • 1/4 cup crumbled feta cheese (optional, or reduced-fat for WW)
  • 2 tbsp olive oil (or cooking spray for lighter version)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • Salt to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil or cooking spray.
  2. Prepare veggies – Spread zucchini, bell peppers, onion, and cherry tomatoes in the baking dish.
  3. Season chicken – In a bowl, toss chicken cubes with olive oil, garlic, oregano, basil, paprika, salt, and pepper.
  4. Assemble – Place chicken over the veggies, scatter olives, and squeeze lemon juice on top.
  5. Bake uncovered for 25–30 minutes, until chicken is fully cooked and veggies are tender.
  6. Top & serve – Sprinkle with feta cheese and fresh parsley before serving.
