Ingredients:

  • Crust:
    • 1 reduced-fat graham cracker crust (store-bought or homemade, typically 8–9 inches)

  • Filling:
    • 1 (14-ounce) can fat-free sweetened condensed milk (~24 points)
    • ¾ cup fresh lemon juice (~0 points)
    • Zest from 1 lemon (optional for extra lemony flavor, 0 points)
  • Topping:
    • Light whipped topping (like Fat-Free Cool Whip or homemade), optional (~0–1 point per serving)

🍋 Instructions:

  1. In a medium bowl, whisk together the fat-free sweetened condensed milk and fresh lemon juice until thickened and smooth. Stir in the lemon zest if desired.
  2. Pour the mixture into the reduced-fat graham cracker crust and spread evenly.
  3. Refrigerate for at least 4 hours or until set.
  4. Before serving, top with a dollop of light whipped topping and a sprinkle of lemon zest if desired.
