Blackberry Cobbler 🍇🍰
This Blackberry Cobbler is a perfect dessert for any occasion. With sweet, juicy blackberries and a buttery, biscuit-like topping, it’s a crowd-pleaser that’s easy to make!
Ingredients:
For the Filling:
- 4 cups fresh or frozen blackberries
- 1/2 cup granulated sugar (or sugar substitute if desired)
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon (optional)
For the Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter (cold, cut into small pieces)
- 1/2 cup milk (or unsweetened almond milk)
- 1 tsp vanilla extract
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or an equivalent size.
- Prepare the Filling: In a large bowl, combine the blackberries, sugar, lemon juice, cornstarch, vanilla extract, and cinnamon (if using). Gently stir to combine, ensuring the blackberries are evenly coated. Pour the mixture into the prepared baking dish.
- Make the Topping: In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold butter and use a pastry cutter or your fingers to cut it into the dry ingredients until the mixture resembles coarse crumbs.
- Add Milk: Pour in the milk and vanilla extract, stirring just until the dough comes together. It will be slightly thick but spoonable.
- Assemble the Cobbler: Drop spoonfuls of the biscuit-like topping evenly over the blackberry filling. It doesn’t need to completely cover the filling — some gaps are fine, as it will spread as it bakes.
- Bake: Place the cobbler in the oven and bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
- Serve: Allow the cobbler to cool slightly before serving. It’s great on its own or topped with vanilla ice cream or whipped cream!
Tips:
- You can substitute other berries or a mix of berries if you prefer.
- For extra sweetness, sprinkle a little coarse sugar on top of the biscuit topping before baking.
- This cobbler is best served warm, but it can be stored in the refrigerator for up to 3 days.
Enjoy your Blackberry Cobbler — it’s the perfect balance of sweet, tart, and buttery! 🍇🍰
