This quick, easy, and wallet-friendly meal has become my favorite recipe to make for lunch or a light dinner!
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Yield: 1 serving
Ingredients
– 1 Tbsp butter or olive oil (or a combination of both)
– 1 garlic clove, minced
– 1 cup lightly packed cabbage, finely shredded
– 2 eggs, lightly beaten
– Salt and pepper to taste
Instructions
1. Heat the Pan: Heat a non-stick pan over medium heat.
2. Add Fat: Add the butter and/or oil to the pan, allowing it to melt and spread evenly.
3. Sauté Garlic: Add the minced garlic and sauté for about 20 seconds, or until fragrant.
4. Cook Cabbage: Add the finely shredded cabbage to the pan. Cook, stirring frequently, until the
cabbage softens, about 3-5 minutes. For a caramelized flavor, cook a minute or two longer until it begins to brown.
5. Spread Cabbage: Spread the cooked cabbage out in a thin layer across the pan.
6. Add Eggs: Pour the beaten eggs over the cabbage, tilting the pan slightly to help spread them out.
7. Cook Eggs: Allow the eggs to cook for about 15-20 seconds, then gently fold them over the cabbage
until fully cooked.
8. Season and Serve: Remove from heat, season with salt and pepper to taste, and serve immediately.
