Ingredients:

  • 4 large eggs, beaten
  • 1 cup shredded cheddar cheese
  • 1/2 lb ground sausage, cooked
  • 1/2 tsp salt (adjust to taste)
  • 1/4 cup almond flour (for a low-carb alternative to Bisquick)
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/4 cup heavy cream (optional for extra fluffiness)

Directions:

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C). Grease or spray a muffin pan with non-stick spray.
  2. Cook the sausage in a skillet over medium heat until browned, breaking it into small crumbles. Drain any excess grease and set aside.

Step 2: Mix Ingredients

  1. In a large bowl, beat the eggs and mix in the shredded cheddar cheese, cooked sausage, almond flour, coconut flour, baking powder, and salt.
  2. If desired, stir in heavy cream to make the muffins fluffier.

Step 3: Bake

  1. Spoon the mixture evenly into the greased muffin pan, filling each cup about 3/4 full.
  2. Bake for 18-20 minutes, or until the muffins are golden brown and cooked through.
  3. Let cool for a few minutes before removing them from the pan. Serve warm and enjoy!

Pro Tips:
