- 4 large eggs, beaten
- 1 cup shredded cheddar cheese
- 1/2 lb ground sausage, cooked
- 1/2 tsp salt (adjust to taste)
- 1/4 cup almond flour (for a low-carb alternative to Bisquick)
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1/4 cup heavy cream (optional for extra fluffiness)
Directions:
Step 1: Preheat and Prepare
- Preheat your oven to 350°F (175°C). Grease or spray a muffin pan with non-stick spray.
- Cook the sausage in a skillet over medium heat until browned, breaking it into small crumbles. Drain any excess grease and set aside.
Step 2: Mix Ingredients
- In a large bowl, beat the eggs and mix in the shredded cheddar cheese, cooked sausage, almond flour, coconut flour, baking powder, and salt.
