Chocolate chip cookies
Ingredients:
- 1 ½ cups almond flour (finely ground, blanched)
- ¼ cup coconut flour
- ½ cup unsalted butter (softened, or use coconut oil for dairy-free)
- ½ cup powdered Swerve (or another keto-friendly sweetener)
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup sugar-free chocolate chips (Lily’s or ChocZero work great)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream Butter and Sweetener:
- In a large bowl, using an electric mixer, cream together the butter and Swerve until light and fluffy. You can also do this by hand with a whisk.
3. Add Wet Ingredients:
- Add the egg and vanilla extract, and mix until well incorporated.
4. Combine Dry Ingredients:
- In a separate bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
- Slowly add the dry ingredients to the wet mixture, stirring until fully combined.
5. Fold in Chocolate Chips:
- Gently fold in the sugar-free chocolate chips into the dough.
6. Shape the Cookies:
- Scoop out tablespoons of dough, roll them into balls, and place them on the lined baking sheet about 2 inches apart. Gently flatten them with the back of a spoon or your fingers to create a cookie shape.
7. Bake:
- Bake the cookies for 10-12 minutes, or until the edges are golden brown. The cookies will be soft when they come out but will firm up as they cool.
- Let the cookies cool on the baking sheet for about 10 minutes before transferring them to a cooling rack.
