Keto Lazy Chocolate Chip Cookie Bars

Ready In: 35 minutes
Yields: 16 bars

These rich, chewy keto cookie bars come together in just one bowl. With simple, low-carb swaps, you’ll get all the satisfaction of a classic dessert without the carbs!

Ingredients

  • 1 stick (½ cup) butter, melted
Use grass-fed butter for extra flavor and healthy fats.
  • 2 large eggs
  • 1 box keto yellow cake mix (store-bought or homemade – recipe below)
This replaces the traditional cake mix with a low-carb alternative.
  • 1 cup keto-friendly chocolate chips
Lily’s sugar-free chocolate chips work perfectly for this recipe.
  • Optional: 1 tsp vanilla extract
    For added depth of flavor.

Instructions

  1. Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan (or a smaller 9×9 for thicker bars) with non-stick spray or line with parchment paper for easy removal.
  2. Melt the butter:
In a microwave-safe bowl, melt the butter. Let it cool for a few minutes so that it doesn’t scramble the eggs.
  3. Combine wet ingredients:
In the same bowl with the melted butter, whisk in the eggs and vanilla extract (if using) until well combined.
  4. Stir in the cake mix:
Gradually add the keto yellow cake mix, stirring with a spatula or wooden spoon until a thick dough forms. It will be slightly sticky, which is normal.
  5. Add the chocolate chips:
Fold in the keto-friendly chocolate chips evenly throughout the dough.
  6. Press into pan:
Transfer the dough to the prepared pan, pressing it evenly into the bottom with the back of a spoon or your hands. For an extra touch, you can sprinkle a few more chocolate chips on top.
  7. Bake:
Bake in the preheated oven for 20 minutes if using a 9×13-inch pan, or 25-28 minutes for a smaller, thicker bar (9×9 pan). The bars are done when the edges are golden, and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. Cool and slice:
Let the cookie bars cool completely in the pan before cutting into squares. Cooling helps them set and makes them easier to cut.

Keto Yellow Cake Mix Recipe (Optional, if you prefer homemade)

If you can’t find a keto-friendly cake mix, here’s a quick homemade version:

  • 2 cups almond flour
Keeps it low-carb while adding a slightly nutty flavor.
  • ¼ cup coconut flour
Helps with structure and makes the bars firmer.
  • ½ cup granulated erythritol (or monk fruit sweetener)
Adjust the sweetness to your preference, keeping it keto-friendly.
  • 1 tsp baking powder
Gives the cookie bars a bit of lift.
  • ¼ tsp xanthan gum (optional)
Helps bind the ingredients for a more cohesive dough.
  • Pinch of salt
Enhances the flavor of the dough.

Whisk all the dry ingredients together, and it’s ready to use!
