To make a keto-friendly version of this Creamy Spinach Gratin, we’ll substitute the all-purpose flour with almond flour and use heavy cream instead of milk for a lower-carb content.
Ingredients:
1 large yellow onion, finely diced
1 clove garlic, minced
1/4 cup almond flour
2 1/2 cups heavy cream
2 tsp kosher salt
1/8 tsp nutmeg
5 (10 oz) boxes frozen spinach, chopped and defrosted
1/2 cup Parmesan cheese, grated
1/2 tsp pepper
1/2 cup Monterey Jack cheese or Gruyere cheese, shredded
1 tbsp olive oil or butter for sautéing
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a baking dish or gratin dish and set it aside.
Prepare the Sauce:
In a large skillet or saucepan, heat the olive oil or butter over medium heat. Add the finely diced onion and minced garlic, and sauté until they turn soft and translucent, about 3-4 minutes.
