Vegan Baked Broccoli and Cauliflower Casserole
Ingredients:
- 1 medium head of broccoli, cut into florets
- 1 medium head of cauliflower, cut into florets
- 1 cup raw cashews (soaked in hot water for 15 minutes)
- 1 cup unsweetened almond milk (or other plant-based milk)
- 1/4 cup nutritional yeast
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon onion powder
- 1/2 teaspoon turmeric (for color, optional)
- Salt and pepper to taste
- 1/2 cup panko breadcrumbs (ensure they are vegan)
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Vegetables:
- Bring a large pot of salted water to a boil.
- Add the broccoli and cauliflower florets and blanch for 3-4 minutes until just tender but still bright in color.
- Drain and rinse with cold water to stop the cooking process. Set aside.
- Make the Cashew Cream Sauce:
- Drain the soaked cashews and add them to a high-speed blender.
- Add the almond milk, nutritional yeast, lemon juice, olive oil, minced garlic, Dijon mustard, onion powder, turmeric (if using), salt, and pepper.
