Ingredients:
- 1 cup almonds
- 1 cup pine nuts
- 1 cup coconut flakes
- 1/2 cup cacao nibs
- 10-12 regular dates (not Medjool)
Instructions:
- Prepare the Dates:
- Pit the dates and soak them in warm water for about 10 minutes to soften them.
- Blend the Nuts and Cacao Nibs:
- In a food processor, pulse the almonds and pine nuts until they are coarsely chopped.
- Add the coconut flakes and cacao nibs, and pulse a few more times to combine.
- Add the Dates:
- Drain the dates and add them to the food processor.
- Blend until the mixture starts to come together. It should be sticky enough to hold its shape when pressed together. If the mixture is too dry, add a few more dates or a teaspoon of water at a time until the desired consistency is reached.
- Form the Bites:
- Scoop out small portions of the mixture (about 1-2 tablespoons each) and roll them into balls or press them into bite-sized bars.
- Store:
- Place the bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
- Store the bites in an airtight container in the refrigerator for up to two weeks.
