Weight Watchers Banana Pudding Cheesecake Bars
Ingredients:
- 16 reduced-fat vanilla wafers, crushed
- 2 ripe bananas, mashed
- 1/4 cup unsweetened applesauce
- 8 oz fat-free cream cheese, softened
- 1/4 cup granulated sugar
- 1/4 cup non-fat plain Greek yogurt
- 1/2 tsp vanilla extract
- 1 large egg
- 2 large egg whites
- 1 tbsp all-purpose flour
- 1/2 cup skim milk
- 1/2 cup fat-free whipped topping
Instructions:
- Preheat the oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper or coat with cooking spray.
- In a small bowl, combine crushed vanilla wafers and applesauce. Press mixture evenly into the bottom of the prepared baking dish.
- In another bowl, beat cream cheese and sugar together until smooth. Add mashed bananas, Greek yogurt, and vanilla extract; beat until combined.
- Add egg, egg whites, and flour to the cream cheese mixture; beat until smooth. Gradually add skim milk, beating well after each addition.
- Pour batter over the crust in the baking dish. Smooth the top with a spatula.
- Bake for 30-35 minutes or until set. Remove from the oven and let it cool completely on a wire rack.
- Once cooled, spread whipped topping evenly over the cheesecake layer. Cover and refrigerate for at least 4 hours or overnight.
- Cut into 16 bars. Each serving is 1 bar.
