
Chicken and Bacon Fried Rice

Ingredients:
- 2 cups cooked brown rice (cooled)
- 1 cup cooked chicken breast, diced
- 4 slices turkey bacon, diced
- 1 cup mixed vegetables (frozen or fresh), diced
- 2 cloves garlic, minced
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions:
- Heat a large non-stick skillet over medium heat. Add diced turkey bacon and cook until crispy. Remove bacon from the skillet and set aside.
- In the same skillet, add minced garlic and mixed vegetables. Cook until vegetables are tender, about 5 minutes.
- Push vegetables to one side of the skillet and add beaten eggs to the other side. Scramble the eggs until cooked through, then mix them with the vegetables.
- Add diced chicken breast and cooked brown rice to the skillet. Stir well to combine.
- Pour in reduced-sodium soy sauce and sesame oil. Stir to coat the rice mixture evenly. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Season with salt and pepper to taste. Sprinkle the cooked turkey bacon on top.
- Serve hot, garnished with chopped green onions if desired.
