Ingredients:

  • Buttermilk Biscuits:
    • 2 cans (7.5 oz each) Buttermilk Biscuits. These are typically found in the refrigerated section of the grocery store. Make sure they are the smaller-sized cans, often referred to as “junior” biscuits.
  • Sugar and Cinnamon Mixture:
    • 1 Tbsp Sugar
    • 1 heaping tsp Cinnamon
    • 2 additional tsp Cinnamon (for the egg mixture)
  • Egg Mixture:
    • 5 eggs
    • 1/3 cup 1% Milk
    • 3 tsp Vanilla extract
  • Drizzle:
    • 1 3/4 Tbsp Sugar-Free Syrup (maple flavored works well)
  • Icing:
    • 1/3 cup Swerve Confectioners Sugar (a sugar substitute that measures like powdered sugar)
    • 1 Tbsp Milk (you can use any type, but 1% is a good option)
    • 1 tsp Vanilla extract

Instructions:

  1. Preparation:
    • Preheat your oven to 350°F (175°C).
    • Spray a 9×13 inch baking dish with nonfat cooking spray to prevent sticking.
  2. Prepare Biscuits:
    • Open both cans of buttermilk biscuits.
    • Cut each biscuit into 6 pieces. You should end up with 120 small pieces of dough.
  3. Coat Biscuits:
    • In a gallon-sized Ziploc bag, combine 1 Tbsp of sugar and a heaping tsp of cinnamon.
    • Add the biscuit pieces to the bag.
    • Seal the bag and shake vigorously until all pieces are well-coated with the sugar and cinnamon mixture.
    • As you shake, the pieces may clump together, so take care to separate them periodically to ensure even coating.
  4. Arrange Dough:
    • Spread the coated biscuit pieces evenly in the prepared baking dish. Make sure they cover the bottom of the dish in a single layer as much as possible.
  5. Make Egg Mixture:
    • In a medium-sized bowl, whisk together the 5 eggs and 1/3 cup of milk.
    • Stir in 3 tsp of vanilla extract and the remaining 2 tsp of cinnamon.
    • Pour this mixture evenly over the dough pieces in the baking dish.
  6. Drizzle:
    • Drizzle the 1 3/4 Tbsp of sugar-free syrup evenly over the top of the mixture in the baking dish.
  7. Bake:
    • Place the baking dish in the preheated oven.
    • Bake for 35 minutes or until the top is golden brown and the egg mixture is set.
    • Remove from the oven and let cool slightly.
  8. Prepare Icing:
    • In a small bowl, combine 1/3 cup of Swerve confectioners sugar, 1 Tbsp of milk, and 1 tsp of vanilla extract.
    • Mix until smooth and well combined.
  9. Serve:
    • Pour the icing over the French Toast Bubble Up while it’s still warm for best absorption.
    • Allow it to set for a few minutes.
    • Cut into 12 equal servings.

Additional Tips:

  • Biscuit Pieces: When cutting the biscuits, using a sharp knife or kitchen shears can make the process quicker and cleaner.
  • Mixing Bag: If you don’t have a gallon-sized Ziploc bag, you can use a large mixing bowl. Just be sure to mix well to coat all the pieces.
  • Substitutions: If you prefer, you can use a different type of milk (e.g., almond milk) in both the egg mixture and the icing. Just keep in mind this may alter the Weight Watchers points slightly.
  • Swerve Substitute: If you don’t have Swerve confectioners sugar, you can use regular confectioners sugar, but this will change the nutritional information and Weight Watchers points.

This expanded detail should help ensure you get the best results from your French Toast Bubble Up. Enjoy!
