Lightened-Up Old-Fashioned Bread Pudding with Vanilla Sauce
Bread Pudding:
Ingredients:
- 8 slices whole wheat bread, cut into cubes
- 2 cups unsweetened almond milk (or any other low-fat milk)
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Cooking spray
Instructions:
- Preheat your oven to 350°F (175°C).
- Lightly coat an 8×8-inch baking dish with cooking spray.
- In a large mixing bowl, whisk together the almond milk, eggs, applesauce, honey or maple syrup, vanilla extract, cinnamon, and nutmeg until well combined.
- Add the bread cubes to the bowl, stirring gently to ensure all bread cubes are coated with the liquid mixture.
- Let the mixture sit for about 10-15 minutes to allow the bread to absorb the liquid.
- Transfer the bread mixture into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 35-40 minutes, or until the pudding is set and golden brown on top.
- Remove from the oven and let it cool for a few minutes before serving.
Vanilla Sauce:
Ingredients:
- 1 cup unsweetened almond milk (or any other low-fat milk)
- 2 tablespoons cornstarch
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Instructions:
- In a small saucepan, whisk together the almond milk and cornstarch until the cornstarch is dissolved.
- Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly.
- Once the mixture has thickened, remove it from the heat and stir in the honey or maple syrup and vanilla extract.
- Let the sauce cool slightly before serving.
