1/4 cup psyllium husk powder

4 large eggs

1 cup heavy cream
1/2 cup powdered erythritol or your preferred keto sweetener
1/4 cup unsalted butter
A pinch of salt

For the keto-friendly sweetened condensed milk:
In a saucepan over medium heat, combine the heavy cream and powdered erythritol. Stir to dissolve the sweetener.
Add the unsalted butter and a pinch of salt to the saucepan. Stir continuously as the mixture simmers and thickens.
Cook for about 15-20 minutes, until the mixture has reduced by about half and has a thick, syrupy consistency similar to traditional sweetened condensed milk.
Remove from heat and let it cool. It will continue to thicken as it cools. Once cooled, you can use it in the bread recipe.
For the bread:
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
In another bowl, beat the eggs, then add the almond milk, melted coconut oil, keto-friendly sweetened condensed milk, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until a thick batter forms. Let the batter sit for a few minutes to allow the coconut flour and psyllium husk to absorb the liquids.
Transfer the batter to the greased loaf pan and smooth the top.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely before slicing.
