  • 1 tsp vanilla extract

For the fruit topping:

  • A mix of low-carb fruits such as berries (strawberries, blueberries, raspberries), and sliced kiwi or other keto-friendly fruits
  • Optional: A sprinkle of unsweetened coconut flakes or chopped nuts

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Crust:
    • In a mixing bowl, combine almond flour, coconut flour, melted coconut oil or butter, powdered erythritol, egg, vanilla extract, and a pinch of salt. Mix until a dough forms.
    • Press the dough onto a parchment-lined baking sheet, shaping it into a round or rectangular crust, about 1/4 inch thick.
  3. Bake Crust:
    • Bake the crust in the preheated oven for 12-15 minutes, or until it’s golden brown. Allow it to cool completely.
  4. Prepare Cream Cheese Frosting:
    • In a separate bowl, beat together softened cream cheese, powdered erythritol, and vanilla extract until smooth.
  5. Assemble:
    • Once the crust has cooled, spread the cream cheese frosting evenly over the crust.
  6. Add Fruit Toppings:
    • Arrange the low-carb fruits on top of the cream cheese frosting. Be creative with the arrangement.
  7. Optional Garnish:
    • Optionally, sprinkle unsweetened coconut flakes or chopped nuts on top.
  8. Chill and Serve:
    • Refrigerate the keto fruit pizza for at least 1-2 hours to allow the cream cheese frosting to set.
  9. Slice and Enjoy:
    • Once chilled, slice the pizza into servings and enjoy your keto-friendly fruit pizza!
