Ingredients:
For the Chicken Mixture:
- 2 lbs boneless, skinless chicken breasts, cooked and shredded
- 8 oz cream cheese, softened
- 1 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4-5 jalapeños, seeds removed and finely chopped
- 4 green onions, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
For the Topping:
- 1 cup crushed pork rinds (for a crunchy topping)
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro or parsley
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, softened cream cheese, mayonnaise, shredded cheddar, shredded mozzarella, grated Parmesan, chopped jalapeños, chopped green onions, garlic powder, salt, and pepper. Mix until well combined.
- Spread the chicken mixture evenly in a greased casserole dish.
- In a small bowl, mix together the crushed pork rinds, shredded cheddar cheese, and chopped cilantro or parsley. Sprinkle this mixture over the chicken mixture in the casserole dish.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
- Garnish with additional chopped jalapeños, green onions, or fresh cilantro if desired.
