🐟 Crispy Southern-Style Fried Catfish

Golden, crunchy, well-seasoned on the outside and tender and flaky inside. This recipe works especially well with catfish fillets.

Ingredients

For the catfish

  • 1½–2 lb (700–900 g) catfish fillets
  • 1Β½ cups buttermilk
  • 1 large egg
  • 1 tbsp hot sauce β€” optional
  • 1 tsp salt
  • Β½ tsp black pepper

Crispy coating

  • 1Β½ cups yellow cornmeal
  • Β½ cup all-purpose flour
  • 1 tbsp cornstarch β€” makes the crust extra crispy
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Β½ tsp black pepper
  • Β½ tsp cayenne pepper β€” adjust to taste
  • 1 tsp salt
  • Β½ tsp dried thyme β€” optional

For frying

  • Neutral frying oil such as peanut, canola, or vegetable oil

For serving

  • Lemon wedges
  • Tartar sauce
  • Pickles
  • Fresh parsley
  • Hot sauce

1. Prepare the catfish

If the fillets are large, cut them into smaller pieces about 2–3 inches wide.

Pat the catfish thoroughly dry with paper towels.

This is important because excess water prevents the coating from sticking properly and can make the oil splatter.


2. Make the buttermilk marinade

In a large bowl, whisk together:

  • 1Β½ cups buttermilk
  • 1 egg
  • 1 tsp salt
  • Β½ tsp black pepper
  • 1 tbsp hot sauce, if using

Add the catfish and make sure every piece is coated.

Cover and refrigerate for 30 minutes to 2 hours.

Don’t marinate overnightβ€”the texture can become too soft.


3. Make the crispy coating

In a shallow dish, combine:

  • 1Β½ cups cornmeal
  • Β½ cup flour
  • 1 tbsp cornstarch
  • paprika
  • garlic powder
  • onion powder
  • black pepper
  • cayenne
  • salt
  • thyme

Mix very well.

Why cornmeal + flour?

Cornmeal gives you the classic crunchy catfish crust, while flour helps the coating adhere and brown evenly. Cornstarch gives you an additional crisp texture.


4. Coat the catfish

Remove one piece of catfish from the buttermilk.

Let the excess drip off.

Place it into the cornmeal mixture and press the coating firmly onto the fish.

Turn it over and coat the other side.

For an extra-thick crust:

buttermilk β†’ coating β†’ buttermilk β†’ coating

Place the coated pieces on a wire rack and let them sit for 5–10 minutes before frying.

This little resting period helps the coating adhere.


5. Heat the oil

Pour about 1½–2 inches of oil into a heavy-bottomed skillet or Dutch oven.

Heat to approximately 175Β°C / 350Β°F.

A thermometer is extremely helpful.

No thermometer?

Drop a tiny amount of the cornmeal coating into the oil. It should immediately bubble actively and rise to the surface, but it shouldn’t burn rapidly.


6. Fry the catfish

Carefully place the coated catfish into the hot oil.

Don’t overcrowd the pan. Fry in batches if necessary.

Cook for approximately:

3–5 minutes per side, depending on thickness.

The outside should become deep golden brown and crispy.

The fish should reach an internal temperature of 145Β°F / 63Β°C.

When cooked, transfer the catfish to a wire rack over a baking sheet.

This is better than putting it directly on paper towels because air can circulate underneath and keep the bottom crispy.

Immediately sprinkle with a very small amount of salt.

Mix:

  • Β½ cup mayonnaise
