I found the tortillas at my usual grocery store, they’re Guererro brand and are delicious!

Skillet chicken tacos with zero net carb tortillas, makes one serving
1 tbsp avocado oil
1/8 tsp of of each: paprika, cumin, dried oregano, turmeric, granulated onion and garlic, black pepper
1/4 tsp salt
2 mini sweet peppers, sliced thinly
1 large chicken thigh, diced
1 tbsp water
3 zero net carb tortillas
2-3 tbsp diced onion
1 tbsp chopped cilantro
1 tbsp cheese of choice

guacamole, pico de gallo, salsa, sour cream, for garnish

  1. Set a skillet or nonstick pan over medium heat and let it come to temperature.
  2. Meanwhile, combine the spices and salt with the avocado oil in a mixing bowl. Toss the sliced sweet peppers and diced chicken in the marinade, then transfer to the pan and sauté until cooked through. If it starts to dry out, lower the heat to medium-low add the tbsp water and continue to stir until it is cooked off.
  3. Zap the tortillas in the microwave, then top each with a portion of the chicken, the chopped onion and cilantro, cheese, and any “accouterment” you’re using. Enjoy!
