  • 1/2 sweet onion chopped small
  • 2 TBS butter
  • Sauté the onions in the butter
  • Add one bag chopped cauliflower florets
  • Add 3 cups chicken stock
  • 1 tsp garlic powder
  • 1 tsp Himalayan salt
  1. Seal in the instant pot
  2. Cook on HIGH PRESSURE for 5 minutes then release.
  3. Once done use an immersion blender or add to a food processor (make sure the cauliflower is super soft) and blend til smooth
  4. Add 4 oz cubed cream cheese and 1 cup shredded cheddar and start to “melt”.
  5. Return cauliflower and stock to instant pot and allow the cheese to melt completely.
  6. Add 1/2 cup heavy cream.
  7. Top with bacon, onion, cheese, sour cream… anything you want!!
