- 1/2 sweet onion chopped small
- 2 TBS butter
- Sauté the onions in the butter
- Add one bag chopped cauliflower florets
- Add 3 cups chicken stock
- 1 tsp garlic powder
- 1 tsp Himalayan salt
- Seal in the instant pot
- Cook on HIGH PRESSURE for 5 minutes then release.
- Once done use an immersion blender or add to a food processor (make sure the cauliflower is super soft) and blend til smooth
- Add 4 oz cubed cream cheese and 1 cup shredded cheddar and start to “melt”.
- Return cauliflower and stock to instant pot and allow the cheese to melt completely.
- Add 1/2 cup heavy cream.
- Top with bacon, onion, cheese, sour cream… anything you want!!
