Keto Blueberry Bread Recipe

Ingredients:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup erythritol
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 2 tbsp coconut oil for greasing the pan

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. Grease a 9×5 inch loaf pan with coconut oil and set aside.
  3. In a large bowl, mix together the almond flour, coconut flour, baking powder, cinnamon, and salt.
  4. In a separate bowl, whisk together the melted butter, erythritol, eggs, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. Gently fold in the blueberries.
  7. Pour the batter into the prepared loaf pan and smooth out the top.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  9. Allow the bread to cool completely in the pan.
